You can’t beat a spot of DIY on Fathers Day, especially when your efforts are matched with the most delicious lemony baking smells that will wake dad up and put him in the best mood to start the day. If you’re delivering your loaf to dad simply wrap it up in baking paper and tie with a bit of string. If dad has a sweet tooth, pour your icing into an old jam jar and give it to dad to spread it over the loaf for morning or afternoon tea.

Lemon Loaf for Dad

Makes 1 loaf

Ingredients:

125 grams butter

3/4 cup caster sugar

grated rind of 3 lemons

1 egg

1/2 cup sour cream

1 3/4 cups self-raising flour

1/4 cup mixed peel

1/4 cup milk

2 tbsp lemon juice

Method:lemon loaf with icing

1. Cream butter, sugar and lemon together. Beat in egg, then sour cream.

2. Fold in the sifted flour and mixed peel alternately with the milk and lemon juice.

3. Pour evenly into a well-greased and floured 10 cm x 20 cm loaf tin.

4. Bake at 180°C for 40 minutes. or until a skewer inserted in the centre of the loaf comes out clean.

 

If dad has a sweet tooth add…

Sour cream icing

Ingredients:

1/2 cup sour cream

1/4 cup icing sugar

grated rind of 1 lemon

Method:

1. Beat the sour cream, icing sugar and lemon rind in a medium bowl until combined. Refrigerate for 10 minutes before you spread it on the cooled down loaf.
