There’s a number of sweet potato burger patty recipes on the internet. Some are very good, and others tend to be a little bland.

This adapted recipe is the best of both worlds. They’re vegan, vegetarian and gluten free, full of flavour and very tasty. They’re also surprisingly easy to make!

Kumara (Sweet Potato) and Cannellini Burger Patties

Kumara (Sweet Potato) and Cannellini Burger Patties

Total Time 40 minutes

Ingredients

  • 2 large kumara
  • 1 ½ cups drained and rinsed cannellini beans
  • 1 Tbsp chunky peanut butter (Pic’s is good)
  • 1 tsp maple syrup
  • 1 tsp smoky spice mix or smoked paprika
  • 1 garlic clove peeled and finely chopped
  • Salt and pepper to taste
  • 2-3 Tbsp good quality cooking oil to adjust texture so you can easily form the mix into patties
  • Crushed gluten-free cornflake crumbs (Hubbard’s gluten free cornflakes are nice) to coat the patties

Instructions

  1. Wash and boil the kumara in a pot well seasoned with salt, then scoop the flesh out of their skins.
  2. Place the warm kumara flesh in a large bowl and add the drained beans. Mash well – this may take a few minutes with a potato masher.
  3. Add the peanut butter, maple syrup, garlic and spice and mix well.
  4. Add oil as needed to get a handleable texture so you can form the mix into patties,
  5. Coat the patties with cornflakes crumbs.
  6. Heat a thin layer of cooking oil in a large frying pan and fry the patties for about 2-3 minutes each side until nicely browned.

Recipe Notes

Serve with salad or veges of your choice, or use as hamburger patties.
