Carrot muffins are a really tasty treat that you and your kids can enjoy. They are so simple to make, which makes them, a great recipe to bake with your kids.

Carrot Muffins

Easy Carrot muffins that the whole family can enjoy.

Ingredients

wet ingredients

  • 1 cup milk or water
  • 3 eggs Or use an egg replacer
  • 75 g butter melted
  • 1 cup grated carrot
  • ½ cup sultanas
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 3 Tbsp apricot jam

Dry ingredients

  • 3 tsp Baking Powder
  • 3 Tbsp brown sugar
  • 1 ¾ cups flour

Instructions

  1. Oil your muffin tins and turn the oven onto 220°C

  2. Mix all wet ingredients together in a bowl. Then add the dry ingredients to the wet. 

  3. Mix together and place in oiled muffin tins. The recipe makes 12 good-sized muffins. 

  4. Bake 15-20 min at 220°C or until nicely risen and firm to the touch.

  5. Cool in tins for 5 to 10 minutes then remove to a wire rack to cool.
