Beef Nachos is a great last-minute dinner when you have only a few minutes and have run out of energy and inspiration. As long as you have a bag of corn chips and a tin of kidney beans in the cupboard, you’re away!
For best results use Angus premium mince meat. The Nachos mix in this recipe is child friend but feel free to spice it up with some fresh sliced chilli and a good dollop of guacamole.
Beef Nachos

Ingredients
- 500 g minced beef
- 1 onion diced
- 1 garlic clove crushed
- 1 400g tin kidney beans well washed and drained
- ½ tsp salt
- Ground black pepper
- 3 tsp nacho spice mix
- 1/2 cup Tomato sauce
Nacho Spice Mix:
- 4 Tbsp cumin
- 2 Tbsp coriander
- 1 Tbsp mixed spice

Place all Nacho spice mix ingredients in a small lidded jar and shake thoroughly. Keep this as a stock mixture and use as required in the following recipe.

Fry the mince, onion and garlic in a little oil in a large frypan, until the mince is browned and all the water has evaporated

Add the salt, pepper and nacho spice mix and stir well over medium heat for about a minute Turn the heat to low and add the drained beans.

Stir gently for 2 to 3 minutes to heat through. Add tomato sauce as desired to moisten the mix and add flavour.
Recipe Notes
Serve with plain corn chips and a salad topped with guacamole or sour cream and grated cheese.
