Carrot Muffins
Easy Carrot muffins that the whole family can enjoy.
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients
wet ingredients
- 1 cup milk or water
- 3 eggs Or use an egg replacer
- 75 g butter melted
- 1 cup grated carrot
- ½ cup sultanas
- 1 tsp cinnamon
- 1 tsp nutmeg
- 3 Tbsp apricot jam
Dry ingredients
- 3 tsp Baking Powder
- 3 Tbsp brown sugar
- 1 ¾ cups flour
Instructions

Oil your muffin tins and turn the oven onto 220°C

Mix all wet ingredients together in a bowl. Then add the dry ingredients to the wet.

Mix together and place in oiled muffin tins. The recipe makes 12 good-sized muffins.

Bake 15-20 min at 220°C or until nicely risen and firm to the touch.

Cool in tins for 5 to 10 minutes then remove to a wire rack to cool.
