Try this quick and easy dinner recipe for the whole family … CHICKEN, BACON & CHEESE PARCELS

Preparation time: 15 minutes

Cooking time: 15 minutes

2 carrots, cut into thin strips

4 sticks celery, cut into thin strips

4 single chicken breast fillets

1 tablespoon Oregano, chopped

4 spring onions, sliced

3 rashers bacon, diced

1 cup tasty shredded cheese

Directions:

1. Pre-heat oven to 180ºC. Place 4 sheets of baking paper, approximately 30cm x 30cm on a flat surface. Place some carrot and celery in the centre of each one. Top with a chicken breast.

2. Sprinkle each chicken breast with oregano. Place spring onion, bacon and cheese in a bowl and mix well. Divide equally and place on the top of each chicken parcel.

3. Fold baking paper up to form a parcel and place in oven for 15 minutes or until cooked through. Serve with salad.

Serves 4

Note: You can substitute the bacon with diced ham for a lower fat option and use dried oregano if fresh isn’t available.
