A quick and easy lunch for a toddler – these can be easily cut and put into the lunchbox or taken with you for a snack as well, so make two and they’re sure to come in handy!

Ingredients:

  • Two flour tortillas
  • 2 Tbsp grated cheddar cheese

Method:

Heat a frypan on an element and place a tortilla in the pan.  Flip the toritilla after a few seconds, so the hot side is facing up.  Sprinkle the cheese all over the surface of the tortilla.  Place the second tortilla on top of the cheese, and flip the stack carefully. Allow the heat to melt the cheese for approximately a minute.  Take the tortilla off the heat and once cool to the touch, cut it into small wedges for your child to enjoy.

Try sliced  mushrooms, grated carrot, baby spinach or some canned crushed pineapple for extra zing.

Create your own dipping sauce for extra lunchtime fun – use an instant sauce from your fridge or make a fresh salsa by blending a tomato with some avocado and spring onions, sour cream or yoghurt – or whatever you have to hand!
