This easy-as-pie lemon curd was Jon Toogood’s Mum’s recipe, and she got it from her mum.
I always loved it as a child. I know there’s lots of sugar in it and I know it’s not healthy but that’s exactly why I love it!
Jon Toogood’s lemon curd
Ingredients
400g sugar
115g butter
Juice of 6 lemons
4 eggs, well beaten
Method
Place the sugar, butter and lemon juice in a pot.
Add a little finely grated lemon zest from 1 of the juiced lemons.
Heat the ingredients slowly, stirring, until the butter has melted, the sugar has dissolved and the mixture is smooth.
Remove from the heat, add the eggs and stir until everything is well mixed.
Pour the mixture into a glass bowl set over a pot of simmering water and cook until it is thick, smooth and golden – do not let it boil!
Divide the curd between 2 sterilised jars and seal.
TIP: Lemon curd is delicious in desserts such as lemon tart or lemon meringue pie or just spread on thick slices of toasted bread. It also makes a great gift at Christmas time!
