Summer’s a’knockin’ at the door, and I find myself wanting light, delicious, crisp items on my plate in the evenings. This book will help you ‘include more ‘greens’ in your diet and cut back on processed foods’. We all need that, right?

To start with, this book is written by kiwi Penny Oliver. That means the ingredients are available on-shore… hurrah! When you’ve got a glut of something like radishes ready in your summer garden, you can flick to the index and find all the options for using them up before they’re past their best. Cost-effective, nutritious meals – the best kind.
The book begins with detailing the basics of a successful salad, before launching into 130 odd salad recipes. Some of the salads are built around meat/seafood/nuts, or grains, and others more or less just utilise veges and salad greens. There’s plenty of variety here. Some are ridiculously easy – like cut wedges of lettuce with a delicious feta dressing – and sometimes that’s exactly what you want when you’re in a hurry.
The list of dressings, incidentally, are fab. Many are original; all sound flavourful. You can mix and match for variety.
The conclusion
From the plain to the fancy; mid-week meal or side, this book capitalises on the simplicity of a good salad. Like Oliver’s book Bach, Beach, Boat, Barbeque – this book is likely to be seen everywhere this summer (but it will be useful for winter veg too). Yum!
