We’re enjoying the last of the summer sun with all sorts of yummy smoothies at the moment. We’ve been experimenting with avocado and chia seeds to make super thick and smooth smoothies. And, of course, the humble banana, which tends to be a staple ingredient in all our smoothies.
But, something we’ve never tried before is pineapple. I’ve always thought of pineapple as more of a juicing option than putting into a smoothie. But now that we’re using the awesome George Foreman Mix and Go smoothie maker, smashing a pineapple into smooth, silky pulp is no problem.
This sweet, summery smoothie recipe we got from Dole uses pineapple, banana and vanilla for sweetness, and ginger for zing. The coconut milk and yoghurt gives it lots of body for a nice, thick drink. So smash up a glass of sunshine yourself, and sip away the last of the summer sun with us!
Tropical Ginger Smoothie recipe
Ingredients
1 cup pineapple, diced
2 frozen bananas, peeled
2cm piece ginger, chopped
1/3 cup natural yoghurt
1/2 cup coconut milk (or coconut water)
Dash of vanilla extract
Pinch of salt
Method
Combine all ingredients in a blender, or smoothie maker, and blend until creamy.
