Ingredients:
Onion- diced
Salt & pepper
Herbs
2-3 grated carrots
2-3 grated zuchinnis
1/2 grated cheese
Canned tomatoes
1/4 cup chicken stock
How to make carrot and zuchinni crepes
Make a batch of your favourite crepe styled pancakes, but add to the mixture some thinly sliced onion for a savoury flavour. As you make the crepes roll them and leave on a plate.
Filling
Place a little olive oil and the onion in a saucepan and cook for several minutes with herbs and s&p.
Then add grated carrots, zuchinni and cheese – put lid on saucepan and keep on a low heat till the mixture is cooked (soft).
Put filling inside of crepes and roll them up – then place filled crepes in an oven proof dish (only one layer – don’t stack them).
Blend the canned tomatoes so they look like a sauce and put them in a saucepan with stock and boil for a couple of minutes. Then pour over crepes and cover with grated cheese.
Put in a moderate over for 15-20 minutes.
Serve with salad and herb bread.
