3 small bananas, mashed
1 3/4 c plain flour
1/2 c sugar
1/4 c brown sugar
1 tsp baking soda
2 eggs
1/2 c butter, melted
Few drops vanilla essence
1/2 bag (approx 3/4 cup) white choc drops, roughly chopped
Method:
Preheat oven to 170 degrees celcius. Place muffin cases into a 12 muffin tray.
Mash bananas.
Sift flour and baking soda in a large bowl. Add sugars and chocolate.
In a measuring jug, melt butter. Add vanilla essence, mashed bananas and 2 eggs. Mix together well. If its a bit thick, add a few touches of milk.
Spoon into muffin cases 3/4 full. Place into oven and bake for 15 or so minutes, until muffins spring back when gently touched.
Allow to cool on a cooling rack.
