If you’ve been thinking about what to cook for your family Christmas, here’s a treat for you! This menu has lots of colour, great flavours and there’s something for everyone. Even better, it’s not to complicated and you could even get different family members to prepare each course. Each menu is in a different post – just click on the links to get to the next recipe. Marmalade and whiskey glazed ham

Christmas for us, is a day-long food grazing event. We usually start with a breakfast at our respective houses, smoked salmon, english muffins, mini snags, watermelon and good strong coffee. After the presents, we head to the main event, where we continue the feast. We like to mix it up each year, last year we rented an old caravan for the day at Takapuna Beach campground, on Auckland’s north shore. This was in an effort to show the British relies what kiwi Christmas’s are all about. Unbeknownst to them, they also became part of our traditions, when they were roped into dressing up and delivering the presents. This year, we will spend it in the garden under a gazebo at our Auntie’s house. Who might turn up this year disguised as Santa, who will know, let’s hope it’s not our turn! What we do know is, we will have an excess of Christmas ham, that will be divvied up and will keep us fed for the next few weeks. And, as we also holiday together, we all turn up with our tupperware containers filled to the brim with that same ham, as an offering for the evening meals. This Christmas menu was put together with simplicity in mind. All dishes will look amazing and colourful on the outdoor table, but they aren’t hard to create at all. 1 cup sugar

1 cup marmalade

1/4 cup whisky (optional of course but tastes great ;-))

1/4 cup orange juice (fresh or from a bottle)

2 cinnamon sticks

Method

1. Put everything into a saucepan and bring to the boil.

2. Simmer for about 5-10 minutes.

3. When cool brush over a cooked ham that has had the skin removed and has been scored.

Preparation: 15 minutes

Christmas ham tips

The butcher told me to put the ham in the oven without the glaze to open the scored fat and then add the glaze – more flavour gets into the ham. We also got our butcher to skin the ham and score it for us. It certainly saved time and looked professional.)

Slice up leftover Christmas ham, and put into meal sized airtight plastic bags and put in the freezer.

Any bits of misshaped ham can be frozen and used as a topping for pizzas or thrown into pasta dishes.
