Involving our kids in producing the food we eat has immeasurable and lifelong benefits.  Baking is especially useful in this respect as the results can be very quick and are usually delicious – so it’s easy to muster enthusiasm for the task.

These Chocolate Brownies are lovely served warm with ice cream as dessert, or as a special lunchbox treat – this brownie is simple and fast to make.

Chocolate Brownies

These Chocolate Brownies are lovely served warm with ice cream as dessert, or as a special lunchbox treat - this brownie is simple and fast to make.

Servings 12 brownies

Ingredients

  • 2 small cups sugar
  • 2 eggs
  • 2 tsps vanilla essence
  • ½ tsp salt
  • 1 cup olive oil
  • 1 cup plain flour
  • 1 cup self raising flour
  • ½ cup cocoa powder
  • ½ cup chocolate chips

Instructions

  1. Mix first five ingredients together in a bowl with a fork.
  2. Sift in next three ingredients and mix all together until just combined.
  3. Stir in chocolate chips. Pour into a baking paper lined slice pan.
  4. Bake for 20 minutes at 180 degrees. Be careful not to overbake brownie - you want it slightly soft and sticky in the centre.
